chore(linux): replace deprecated parse_version 🍒

Browse source 
`pkg_resources` which contains `parse_version` is deprecated. Latest
versions output a warning. This change uses the suggested replacement,
`package.version.parse` which is available in all supported Ubuntu
versions.
